Nothing brings people together like good food. Families, friends and couples get together to share great food, tell stories, celebrate and have fun times. As great as Mum's cooking is, we are all more switched on to the whole food scene.
Flick on the TV, and you'll find celebrity cooks creating mouthwatering dishes, competitions featuring chefs and home cooks, and food and travel shows. It's all about FOOD, FOOD, FOOD. Search Instagram, Tik Tok or any social media platform for cascades of photos, videos, recipes and the latest tips.
Front and centre are the Chefs. This profession has been elevated, and so too has their imagination, flair, creativity and professionalism. We eat with our eyes; however, top chefs know it has to taste great too. It's about quality ingredients, the intrinsic combination of flavours and seasoning, the exacting science of preparation and cooking, and the dish's balance.
Nearly 20 years ago, the 20th of October was designated International Chefs Day as a way to celebrate and illuminate this noble profession.
Chef Khem from Oxygen Dining Room at Cross Chiang Mai Riverside is the epitome of why we want to honour our Chefs. To be honest, Chef Kem is not one to extol his own virtues, but we will. Oxygen Dining Room, where he and his team's culinary skills shine, is featured in the Thailand Michelin Guide. An outstanding award and great recognition.

Some years ago, I worked in a five-star hotel's French restaurant. I was preparing a salad using live Crayfish. I boiled the water, added Crayfish and closed the lid properly. However, after I finished cooking, I was shocked and surprised to see one Crayfish crawl out from the bowl alive! I cared for it at home until it died about 3-4 years later.

Is there any dish you were confident about that turned out to be a disaster?List Item 2
In my early years, I worked on an Egg station for Breakfast. I found Eggs Benedict the most challenging. Although simple, it has precise processes to follow. My boss asked for a new recipe using a Tom Yum sauce to accompany the Eggs Benedict. I worked hard to adjust the recipe to get it right but wasted more than two dozen eggs in the process. 😊

What was your biggest motivation to become a chef?List Item 3
Ever since I can remember, I have loved cooking. I grew up in a 'chefy' family as we had a Chinese Restaurant in Korat. My Dad was my first teacher and inspired me to become a Chef.

What are the most important skills an aspiring chef should have?List Item 4
Many skills are needed to be a good chef. A critical skill is learning to sharpen knives to ensure precise cutting and butchering. There is no shortcut to preparing and cooking; every recipe starts from basic ingredients, and Chefs must learn how to season well.

Which dish do you recommend diners to try at Oxygen Dining Room?
Definitely the Hokkaido Scallop with Sweet Corn Soup. It is fantastic and our signature dish. We use sweet Hokkaido scallops with the freshest ingredients from local Royal Project farms.
Chefs get their kicks by creating delicious meals, seeing the smile on a customer's face, getting awesome compliments, and being part of the kitchen family. Thank You, Chefs, and Happy International Chefs Day on 20 October. Bon Appetit.
